     Tortellini Chicken Salad

Servings   6 (1 1/4 cup serving

Ingredients
1 (16-oz) California Style Mixture of Vegtables
1 can sliced water chestnuts (drained)
1 red pepper (diced)
1 (9 oz) pkg refrigerated uncooked cheese tortellini
3 cups cubed cooked chicken
1 (8-oz) bottle prepared zesty Italian dressing
2 tablespoons freshly grated Parmesan Cheese
 

Instructions
Cook vegtables according to package directions until crisp tender; drain. Meanwhile, cook tortellini according to package directions; rinse in cold water.
In large bowl, combine cooked vegetables, water chestnuts, red pepper, tortellini, chicken and dressing; toss gently to coat.
Cover; refrigerate until well chilled. Just before serving, sprinkle with cheese.
