     Chicken Potato Roast

Ingredients
1 medium apple, cut into fourths
1 medium onion, cut into fourths
2 large cloves garlic, cut into fourths
8 medium potatoes
1/2 cup butter, melted
1 tsp. dried thyme leaves
1 tsp paprika
1/2 tsp salt
whole chicken
 
Carrots
1/2 tsp. garlic powder
1/2 tsp. italian seasoning

Instructions
Fold wings of chicken across back with tips touching. Place apple, onion and garlic in body cavity. Tie drumsticks to tail. Place chicken, breast side up, on rack in shallow roasting pan.
Peel potatoes and cut crosswise into 1/4 inch slices only 3/4 on the way through. Place on rack with chicken. Add carrots.
Mix remaining ingredients, brush over chicken and veggies. Roast uncovered in 375 deg. oven, brushing with butter mixture every 30 minutes. Bake 2 hours until 180 deg. internal temp.
NOTE - I prefer to use large size cooking bags. No basting is necessary. Bake at 350 deg.
