3 Eggs (well beaten)

1 Cup Cooking Oil
|

2 Cups Sugar
|

2 Cups Raw, Grated, Peeled Zucchini

3 tsp. Vanilla
|

3 Cups Flour
|
|
1 tsp. Baking Soda
|
|
1 tsp. Salt
|
|
3 tsp. Cinnamon
|
|

Instructions |
|
|
Combine eggs, oil, sugar, zucchini and vanilla. Mix well.
|
|
|
Stir flour, baking soda, salt, cinnamon and baking powder together.
Add to Zucchini mix.
|
|
|
Grease and Flour lightly two 5x9x4 loaf pans.
|
|
|
Pour in Batter and bake at 350 degrees for 1 hr.
