While cooking pasta al dente (about 1/2 - 1 min less than package recommends), head oil in a heavy pan and add the prosciutto/bacon and spring onions. Cook over medium heat for about 5 minutes, or until crispy/chewy.
Roughly chop spinach and add to the pan, stir in the vinegar and sugar, cover and cook for 1-2 minutes or until spinach is softened.
Add salt & pepper to taste, then stir in cooked and drained pasta, tossing well. Sprinkle with cheese (to taste) and serve.
