     Banana-Zucchini Bread

Ingredients
3 cups unbleached all purpose flour
1 tsp baking soda
1 tsp salt
1 tsp ground cinnamon
1/2 tsp baking powder
1 cup vegetable oil
3 eggs
1 1/2 cups sugar(recipe calls for 2 cups, not necessary)
1 TBSP vanilla extract
 
1 tsp imitation banana extract (orange extract good too)
2 cups mashed banana
2 cups unpeeled shredded zucchini
1 cup chopped pecans or walnuts (like walnuts)

Instructions
Combine flour,soda,salt,cinnamon and baking powder in a mixing bowl and set aside. Combine oil,eggs,sugar and flavorings in a large bowl; beat well. Stir in bananas and zucchini. Add flour mixture, stirring just until moistened. Stir in pecans.
Pour batter into 2 greased and floured 8x4x3 inch loaf pans. Bake at 350 degrees for 50 to 60 minutes or until a wooden pick inserted in the center comes out clean. Cool in pan 10 minutes; remove from pans and cool completely on wire racks
