     Chinese Dumplings

Ingredients
1 pkg. won ton wrappers
1 lb. ground pork
2 C. chopped nappa
1/4 C. chopped onions
1 T. chopped ginger
1 t. soy sauce
1 t. salt
2 t. sesame seed oil
1 t. wine (sherry, chinese cooking wine)
 
1/2 t. sugar
2 T. cornstarch
Oil for frying
Broth for steaming

Instructions
I cut the corners off the square won ton skins so they are kind of round. Mix everything up to oil for filling. Filling may be prepared ahead and refrigerated. Fill dumplings, brown them and they can be frozen. To reheat, allow to defrost, refry for one minute and continue with the recipe. I try to cook them all, one mess at a time, freeze them and just reheat and eat!
Recipe- Combine filling ingredients. Place 2 t. filling in center of wrapper, wet edge and seal to form half circle. Hold top edge and press down to flatten bottom. Heat 12 in. skillet with small amount of oil and fry dumplings on medium high heat until brown on all sides. Pour 1/2 C. soup stock, cover and cook until liquid is absorbed. Serve with soy sauce or vinegar dip, or hot sesame seed oil.
