Slice the steak 1/4 inch thick against the grain. Mix with cornstarch, soy sauce and sugar. Set aside. Slice mushrooms 1/4 inch thick. Heat wok and add 1 T. oil. Stir fry the mushrooms for 1 minute on high heat, remove and set aside. Heat wok with the remaining 2 T. oil and stir fry the beef until done. Add oyster sauce and water, bring to a boil. Add salt to taste if drained. Thicken with cornstarch and water. Add mushrooms, stir to combine ingredients.
