     Poached Whole Fish

Ingredients
1 sea bass, cleaned (retain head and tail)
1 green onion
2 slices ginger root
1/4 t. white pepper
1/4 C. soy sauce
1 T. sesame seed oil
1/4 C. slivered, pickled ginger or fresh and vegetables
2 green onions, slivered in 2 inch lengths
1/4 c. oil (heated until hot)
 

Instructions
In a large pot, bring to a boil enough water to cover the fish. Add ginger, green onion and the fish. Cover pot, turn temperature to the lowest setting and poach 25 minutes or until done. Remove fish carefully with a large metal strainer and spatula. Place on a large platter. Sprinkle white pepper over fish. Pour soy sauce and sesame seed oil on top of fish. Arrange pickles and green onions on top of fish. Heat the 1/4 C. oil until hot and pour over fish and green onions. The ingredients should sizzle.
