Heat 3 C. oil in the wok to 400 degrees. Put in one rice stick. If it puffs up immediately, put in a small handful. Turn rice sticks over to allow the sticks on top to puff. Remove immediately. Set aside. Soak mushrooms until soft, rinse and boil in some water for 10 minutes. Remove and allow to cool. Squeeze dry and slice into thick strips. Have all other ingredients cut and ready. Combine all ingredients and toss with dressing just before serving.
