Preheat the oven to 400F. Peel, halve, and core the apples and vut them into 1/4-inch-thick slices.
Place the eggs in a blender and pulse a few times to break them up. Add the flour, sugar, salt, and milk and blend until smooth. Lightly butter or spray a 9-inch pie pan. Pour the batter into the pan and bake for 15 minutes. (The pancake will puff up and then fall back down during cooking.)
Meanwhile, melt the butter in a large sauté pan over medium-high heat. Add the apple slices and cinnamon and cook, stirring occasionally, for 10 to 15 minutes, or until the apples are tender. Stir the brown sugar into the apples and remove from the heat.
Remove the pan from the oven and spoon the apples over the pancakes. Reduce the heat to 350F and cook for 10 minutes. Cut the pancake into 6 pieces and serve warm or at room temperature.
