     Tarragon-Shallot Egg Salad Sandwiches

Ingredients
8 large eggs
1/2 C mayonaise
3 T finely chopped shallots
1 1/2 T finely chopped fresh tarragon
2 t tarragon white-wine vinegar
salt & pepper
mayonnaise, for spreading on bread (optional)
12 slices seedless rye bread, or 6 kaiser rolls split in half
shredded soft-leaf lettuce, e.g., Boston
 

Instructions
Boil eggs for 12 minutes, remove. Let sit 2 minutes,drain, run cold water over eggs. Let sit until cool enough to handle. Peel eggs. Chop eggs, place in bowl. Add all other ingredients. Mix with a fork.
Spread mayonnaise, if using, on bread or cut rolls. Spread egg salad on bread, top with lettuce.
