Ingredients
1 1/2 Lbs Ground Beef
1 Medium Onion - Chopped
4 Cloves Garlic - Minced
2 Cans Crushed Tomatoes (28 oz)
2 Cans Tomato Paste (6 oz)
3 Cans Tomato Sauce (6 1/2 oz)
1 Teaspoon Italian Seasoning
3 Teaspoons Fresh Basil - Chopped
1 Teaspoon Fennel Seed - Crushed
 
1 Teaspoon Salt
2 Eggs
8 Tablespoons Fresh Parsley
Lasagna Noodles
16 oz Ricotta Cheese
12 oz Cottage Cheese
Provolone Cheese
Mozzarella Cheese
Parmasan Cheese

Instructions
Preheat oven to 375 degrees (F) Cook ground beef, onion, and garlic in a large pot over medium heat until browned. Drain. Add in crushed tomatoes, tomato paste, tomato sauce and 1/2 cup of water. Add fresh basil, 4 tablespoons parsley, italian seasoning, fennel seed, and salt. Simmer covered 1 to 1 1/2 hours, stirring often. Cook, drain, and rince lasagna noodles according to package directions.
In a mixing bowl, combine Ricotta Cheese, Cottage Cheese, 1/2 the Parmesan Cheese, Eggs, Parsley, and 1/2 teaspoon of salt.
Assemble- Spread meat sauce across bottom of lasagna pan. Layer noodles over meat sauce. Layer cheese sauce over noodles. Top cheese sauce with mozzarella and provolone cheeses. Repeat layers ending with a layer of meat sauce and top with parmesan cheese.
Bake in preheated oven for 45 minutes. Cool for 15 minutes before serving.
