     COCONUT ICE CREAM

Ingredients
3 eggs
1 pint milk
1 c. shredded coconut, fresh or canned
1 1/2 c. sugar
juice of one lemon
rind of one lemon
1 qt. cream
 

Instructions
Beat together- eggs, grated lemon rind and milk. Place in a double boiler and heat, stirring constantly until mixture begins to thicken - approximately two minutes. Add coconut and set aside to cool. When cool add sugar, lemon juice and cream. Mix thoroughly and freeze until firm in an electric ice cream freezer.
Makes half-gallon
