Instructions
Peel and cut up one cucumber into small cubes. Try to get out as many of the seeds as possible, or buy the seedless hothouse English cucumbers if money is not an option. This should yield about 1 cup of cucumber. Wash and cut up the fresh dill. You will need two tablespoons, or more added for your taste. Add both cucumber and dill to 1 cup of yogurt.
Peel and mince 1/2 of an onion. Add two tablespoons to the yogurt mixture.
Stir mixture and add salt and pepper to taste. Then add juice of 1 lemon. Stir well.
Can be used immediately for Indian dishes or on fish. Taste great the longer it sits in the refrigerator.
Serving Suggestions
With spicy Inidan dishes or on fish
