1 1/4 cup buttermilk, or regular milk with 2 tablespoons white vinegar added
1 egg
1 teaspoon baking soda
1 teaspoon baking powder
Optional- dash of ground coffee added to topping
Instructions
Pre heat oven to 350 degrees Farenheit. Make sure you have a 9 x 12 pan, do not use 8 x 8. Mix the flour, brown sugar, cinnamon and white sugar together. Make sure your brown sugar in lump free before you measure it. Break it up with a fork. Add to this mixture the vegetable oil and stir until smooth. This should take about 5 minutes.
Remove from the mixture 1/2 cup for the topping. Add to the topping portion 1 teaspoon cinnamon and 1 cup chopped walnuts. Set aside.
To remainder of cake batter mixture, add 1 1/4 cup buttermilk, 1 egg, 1 teaspoon baking soda, 1 teaspoon baking powder. Mix and mash out all lumps. (we used an electric mixer, but Sally says you should use a wooden spoon if possible)
Pour batter into a well greased 9x13 Pyrex dish. Sprinkle topping all over top of cake. Bake at 350 for 35 minutes.
Note from Sandra- Sally does not include the ground coffee, but I thought it was a nice touch given the recipe name.
