     Italian Red Lentil Soup

Ingredients
1 teaspoon olive oil
1 16 oz container of mirepoix mix (easy to find at Raley's in produce section)
1 20 oz package of hot or sweet turkey Italian sausage with casing removed
1 50 oz can Fat free reduced sodium Chicken broth
1 14 oz can Italian style diced tomatoes
3 cups red lentils (Raley's bulk bin 660 in natural food section)
1 cup red wine
2 tsp basil
1 cup grated parmesan cheese
 
SHOPPING LIST-

Instructions
Heat oil in large pot, saute mirepoix mix. Add sausage and brown while breaking meat up into small pieces. Cook for 5-10 minutes. Stir in remaining ingredients, except for cheese, and bring to a boil. reduce heat and simmer, covered for 1 hour 15 minutes.
Serve with generous amount of grated Parmesan cheese on top and slices of Rustic Bread.
Nutrition info per serving- 470 calories, 36 grams protein, 12 grams total fat with 3.5 gr saturated and 0 gr transfat, 50 grams carbs, 12 grams fiber, 6 grams sugar, 45 mg cholesterol, 1100 mg sodium.
Notes- Sandra adds fresh minced garlic to the saute mixture.
