This is super easy, and super tasty! It's one of my favorite things my mom made when I was a kid! It's kind of like enchilada lasagne.
Filling-
-Mix the filling ingredients together and set aside.

-Pour enchilada sauce into a shallow bowl
-Dip corn tortillas into sauce (enough to make one layer covering the bottom of the pan) and lay into 8x8 or 2-3 quart cassarole dish
|
|
|
-Layer filling on top of tortillas
-Add a layer of cheese
-And repeat all many times as will allow (I usually get 2-3 layers out of it, depending on how thick I make them!)
-Before placing last layer of cheese on top, pour the remaining sauce over filling--then add the cheese

|
-Bake uncovered at 325 degrees for 30-40 minutes until bubbly and tort
