     Enchilada Lasagna

Ingredients
Filling-
1 pint (2 cups) sour cream
1 tsp of cumin
1/4 cup of chopped green onions (tops and bottoms)
Salt and pepper to taste
2 cups chopped, cooked chicken
Other-
6-10 corn tortillas
1 large can of enchilada sauce
 
2 cups of grated cheddar cheese

Instructions
This is super easy, and super tasty! It's one of my favorite things my mom made when I was a kid! It's kind of like enchilada lasagne. Filling- -Mix the filling ingredients together and set aside.
-Pour enchilada sauce into a shallow bowl -Dip corn tortillas into sauce (enough to make one layer covering the bottom of the pan) and lay into 8x8 or 2-3 quart cassarole dish
-Layer filling on top of tortillas -Add a layer of cheese -And repeat all many times as will allow (I usually get 2-3 layers out of it, depending on how thick I make them!) -Before placing last layer of cheese on top, pour the remaining sauce over filling--then add the cheese
-Bake uncovered at 325 degrees for 30-40 minutes until bubbly and tort
