1 cup warm water (but not hot, more like the temp of a bath)
1 tbsp sugar, ample syrup or honey
1 packet (2 1/2 tsp) active dry yeast
1 1/2 cups whole what flour
1 1/2 cups unbleached white flour
1 tsp salt
3 tbsp olive oil
Cornmeal for dusting pans
Extra olive oil for brushing crust
Instructions
Pour warm water into small bowl. Add sugar or sweetener and stir to dissolve. Sprinkle yeast on top of the water and gently stir until yeast is completely dissolved. Let the yeast mixture stand in a warm spot for about 5 minutes, until you see a foamy layer form across the top of the mixutre.
In a large bowl, combine flours and salt. Scoop a shallow hole in the cener of the flour to form a well and pour in the yeast mixure and olive oil. With a big wooden spoon combine the ingredients until the dough begins to hold together. Add more flour as needed, until the dough pulls away from the sides of the bowl.
Turn dough out onto a floured board or countertop and knead for about 8 minutes.
Shape the dough into a ball and place it in a well-oiled bowl. Cover tightly with plastic wrap and set in a warm place to rest and rise for about an hour. The dough should double in bluk.
When dough is finished rising, knead it lightly for a couple of minutes more and cut inot 2 pieces (for making 2 12 inch pizzas; if you want individual sized pizzas, cut the dough inot 4 to 6 pieces.)
Shape each piece into a ball with your fingers, flatten each ball into a circle of dough about 6 inches in diameter. Use a rolling pin that has been dusted with flour to roll the dough into a 12 inch pizza crust (6 inch for individual pizzas). Your pizza can be any shape- round, rectangular, wahtever.
Dust a pizza pan with cornmeal. Transfer pizza crust to pan. brush the top of the pizza with additonal olive oil and top with your favorite toppings. A pizza baked on this dough will need to bake for 15 to 20 minutes in a 450 oven.
Note- When mixing yeast, if you don't see a foamy layer after 5 to 10 minutes, it means either that the water is too hot or too cold or that the yeast in inactive. Tyr agian with new yeast and adjust the temperature accordingly.
Hint for even tastier crust- About halfway through the pizza baking itme, remove the pizza form the oven and brush the crust with more olive oil.
