     Pesto Pasta

8 oz. of pasta
1 medium sized bunch (about 2 cups) basil leaves (washed)
3 large cloves of garlic, peeled
1/3 to 1/2 cup walnuts, almonds or pine nuts
1/2 cup olive oil
Juice of 1 lemon (about 2 tbsp)
1/2 tsp salt
Black pepper to taste
1 chopped tomato (optional)

Cook pasta according to package directions. Meanwhile, remove and discard the stems from basil. In a food processor or blender, combine basil leaves with remaining ingredients except tomato. Blend unitl everything is very finley chopped and forms a paste.
When pasta is done, drain noodles, let cool for a few minutes and toss them with the pesto in a large bowl or pasta cooking pot. Toss in tomato, if using, and season with additonal salt and pepper. Sever warm or chilled. Serves 2 to 4. Variation- For a cheese version, add 1/4 cup soy or dairy parmesan cheese and reduce salt ot 1/4 tsp or less.
