     Cornbread Muffins

1 cup cornmeal
1 cup flour
1/2 tsp salt
2 tbs sugar
1 tsp baking soda
1 1/4 cups soymilk, rice milk, or dairy milk
5 tbs vegetable or olive oil
1 tsp apple cider vinegar

Preheat oven to 350. In a large bowl, combine cornmeal, flour, salt, sugar, baking powder and baking soda.
In a small bowl mix milk, oil and vinegar.
Add milk-oil mixture to dry ingredients. Blend just until moist, but not longer.
Pour batter into muffin tins and bake 15 to 20 minutes or until muffins are golden brown.
