     Crawfish Etoufee

Ingredients
2-3 lbs crawfish tails
1 lb butte / margarine
5 cups chopped onions
1 cup chopped bell pepper
1 cup chopped celery
25 oz cream of mushroom soup
3 cups water
3-4 Tlbs cornstarch
2-3 pinches parsley
 
Cajun seasoning to taste

Instructions
Melt butter, then add onions, bellpepper, and celery. Saute' until tender. Add crawfish and simmer a few minutes.
Add cream of mushroom soup and simmer 4-5 minutes.
Add water and bring to a boil. Cook 2-3 minutes.
Add cornstarch (3tlbs dissolved in 1 cup of water) for desired thickness. Add seasoning to taste and parsley for color.
