     Coconut Cake

1/2 lb butter
2 cups sugar
4 eggs separated
2 3/4 cups - 2 Tlbs all-purpose flour
4 tsp baking powder
Pinch of salt
1 cup milk
1 1/2 tsp vanilla
1 1/2 tsp coconut flavoring

Pre-heat oven to 350 degrees. Grease and flour 3 cake pans.
Beat egg whites stiff, set aside.
Cream butter and sugar. Add egg yolks, one at a time. Combine and sift flour, baking powder, and salt. Add flour mixture to butter mixture, alternating with milk. Add flavoring. Fold in egg whites.
