     Black-Eyed Pea Salsa

Ingredients
1 can Black Eyed Peas, drained and rinsed
2 Roma tomatoes, chopped
4 Green Onions, chopped
Lots of Cilantro, chopped
3 Tbls. Balsamic Vinegar
2 Tbls. Sugar
1/4 cup Olive Oil
Salt to taste ( about 1/4 tsp.)
1 Clove minced Garlic
 
Jalapeno or other peppers to taste, chopped

Instructions
Toss together the first 4 ingredients.
Combine the other ingredients in a jar or bowl with a lid. Shake until well mixed. Pour the mixture over the other bean mixture.
Serving Suggestions
Refrigerate at least 6 hours prior to serving. Serve with Frito Scoops or Tostitos.
