     Flat Creek Estate Pepper-Apricot Chutney

Ingredients
1 1/4 cup roasted red sweet peppers
1 cup red onion, fine chop
1/3 cup cider vinegar
1/2 cup dried apricots, chopped
1/3 cup golden raisins
1/4 cup granulated sugar
1/4 cup packed brown sugar
1 tbls grated fresh ginger
3 cloves garlic, minced
 
1 tsp crushed red pepper
1/2 tsp salt
1/2 tsp dry mustard

Instructions
In a medium saucepan, combine ingredients. Bring mixture to boiling; reduce heat. Simmer, uncovered about 20 minutes or until slightly thickened. Let cool. Refrigerate to store.
This easy to prepare chutney is a crowd pleaser. Serve on a cracker with Texas goat cheese and pair with Flat Creek Estate Muscato Blacno 2008 or Pinot Grigio 2008. Serve on a roast pork sandwich with your favorite cheese and plenty of chutney and enjoy with Flat Creek Estate Super Texan 2008.
