     Singing Water Vineyard Spinach Chicken Lasagna

6 Lasagna noodles, cooked
1 10oz pkg spinach or fresh cooked, sqeezed dry
2 cups chopped cooked chicken
1 1 /2 cups shredded cheddar
1/2 cup chopped onions
1/2 tsp nutmeg
1 tsp cornstarch
salt, pepper & garlic
1 tsp soy sauce (light)
1 can cream of mushroom soup- low fat
8oz sour cream
1 cup sliced, cooked fresh mushrooms
1/2 cup shredded Pecorino or Parmesan cheese
1/2 cup Grape Nuts

Combine spinach, chicken and remaining ingredients except noodles and pecorino in large bowl. Arrange 2 noodles in a 10 x 12 pan that has been lightly sprayed with oil. Spread 1/2 chicken mixture over noodles. Sprinkle with 1/3 pecorino. Add two more noodles. Repeat chicken mixture and pecorino. Top with remaining 2 noodles and remaining pecorino. Top all with about 1/2 cup Grape Nuts. The Grape Nuts add a wonderful crunch to the dish.
Bake covered at 350 degrees for 55-60 minutes or until bubbly. I cover mine with foil and then remove the foil about the last ten minutes in the oven. Let stand about 10 minutes before cutting.
