     Rancho Ponte Poached Pears

Ingredients
3-6 small firm ripe bosc or bartlett pears
1 lemon juiced and zested
1 orange, zested
1 stick cinnamon
1 star anise
3 whole cloves
1 cup sugar
1/2 cup water
3 cups Max's Merlot
 
1 cup sweetened whipped cream
6 sprigs of mint

Instructions
Halve and core pears. Peel and cover with lemon juice and set aside. In large sauce pan, combine all the flavorings along with the sugar, water and wine. Bring to a boil, add pears then reduce to a simmer. Poach pears for 25 minutes or until tender. Transfer pears to a bowl and let the pears and the poaching liquid cool. Remove pears with slotted spoon and drizzle additional poaching liquid on top. Garnish with sweetened cream and mint.
