Combine egg, milk, salt- stir in flours. Cover. let rest 10 minutes.
ON lightly floured surface, roll dough very thin to 16x20 rectangle. Let stand 20 minutes. Roll up loosely. Cut in 1/4 in. slices, unroll slices. spread out and let dry 2 hours or more.
Cook uncovered for 12 minutes in boiling water.
