3-4 cloves garlic, minced (i like a lot of garlic)
14.5 oz can stewed tomatoes (try to break up tomatoes)
8 oz can tomato sauce
2-15 oz cans black beans, drained
1/2 cup shredded cheddar or taco cheese
Instructions
Cook pasta according to package directions; drain.
In a large saucepan coated with nonstick cooking spray, combine the green pepper, onion, carrots, oregano, cumin, red pepper flakes, sugar and garlic. Cook over medium heat for 5 minutes or until tender.
Add tomato sauce and black beans; bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes or until heated through.
Stir in pasta. Sprinkle with cheese.
