     Carrot Cake

4 eggs
1 1/4 c. vegetable oil
2 c. sugar
2 t. vanilla extract
2 c. flour
2 t. baking soda
2 t. baking powder
1/2 t. salt
2 t. cinnamon
3 c. carrots, grated
2 c. chopped walnuts or pecans
1/2 c. butter, softened
8 oz. cream cheese, softened
1 lb. (2 2/3 c.) confectioner's sugar
1 t. vanilla

Preheat oven to 350 degrees. Grease and flour a 9x13 pan.
In a large bowl, beat together eggs, oil, sugar and vanilla. Mix in flour, baking soda, baking powder, salt and cinnamon. Stir in carrots. Fold in nuts. Pour into prepared pan.
Bake in preheated oven for 40 to 50 mins., or until toothpick inserted into the center of the cakes comes out clean. Let cool before frosting.
To make frosting- In a medium bowl, combine softened butter, cream cheese, confectioners' sugar and vanilla. Beat until mixture is smooth and creamy. Frost cake.
