In saucepot, bring potatoes and enough salted water to cover to a boil. Cook 10 min. Add cauliflower florets. Cook until potatoes and cauliflower are tender. Drain, return potatoes and cauliflower to saucepot.
2.) In skillet, coated with oil or cooking spray, cook green onions 3 min.
3.) Mash potato cauliflower mixture until smooth. Stir in green onions, sour cream and cheese until blended. Season with 1 tsp salt and 1/4 tsp pepper. Transfer potato cauliflower mixture to a serving bowl.
