     Southern Oven Fried Chicken

Ingredients
1 cut up fryer chicken
3/4 c milk or buttermilk
2 t salt
1/2 t cayenne seasoning
1/4 c olive oil
1/4 c lemon juice (optional)
1/2 c corn meal
1/2 c unseasoned bread crumbs or flour
1 T garlic salt
 
1/2 t pepper
1/2 r cayenne seasoning
2 eggs
2 T butter

Instructions
combine first six ingredients in a large shallow bowl and place the cut up chicken in it to marinade for one hour. In another bowl combine the next five ingredients and mix well. in a different bowl combine the eggs and melted butter and mix well. (the eggs will curdle if the butter is too hot so be sure to put it in at a lukewarm temp but it has to be in liquid form.
After the chicken has marinated for one hour take it out and dip it in the egg wash then the crumb coating. place in a greased baking pan and cook for 35-45 min. Juices should run clear when finished.
