     Green tomato salsa

Ingredients
6 green tomatoes, coarsely chopped
1 jalepeno pepper, large, seeded and finely chopped
6 green onions, finely chopped
1 1/2 T. extra virgin olive oil
2 T. fresh lime juice or red wine vinegar
1 t. salt
freshly ground pepper, to taste
1/4 c. sweet onion, finely chopped
1 green pepper or 2 banana peppers (or other combination)
 
2-3 cloves garlic, crushed
1 T. cilantro or to taste
1 T. parsley
Juice of one lime
Seasonings to taste- red pepper flakes, celery salt, cumin, chili powder, tabasco
Agave nectar or sugar to taste

Instructions
Combine all ingredients in a saucepan and simmer until desired thickness is reached, 30-45 minutes. Check seasonings and adjust to your taste. Add cilantro just before removing from heat.
Pour into sterile jar(s). Leave about 1/4 inch headroom to avoid problems in storage. Seal immediately with a hot water bath.
Serving Suggestions
Can also use fresh ripe tomatoes or canned tomatoes in place of green tomatoes.
