Preheat oven to 400. In a medium mixing bowl, beat egg whites
with fork until slightly frothy. In a pie plate, mix breadcrumbs and
2 Tbsp of Parmesan cheese. Dip chix in egg whites and then into
breadcrumb mixture, coating both sides.
Lightly coat a baking sheet with cooking spray and place chix on it.
Bake for 12 min, then turn over and bake for 12 more min, until
chix is no longer pink in the center and coating is golden brown.
While chix is baking, prepare spinach pasta. In asmall suacepan,
warm pasta sauce ove medium heat.
Divide spinach leaves between 2 plates. Add pasta, then the chix
breasts. Top with pasta sauce and parmesan cheese.
