     Mexican Cornbread

Ingredients
1-1/4 cups yellow cornmeal
1/2 cup all-purpose flour
1 T baking powder
1 t salt
2 eggs, beaten to blend
1-1/4 cups milk
3/4 cup shredded sharp Cheddar cheese
1/2 cup vegetable oil
1/2 cup canned cream style corn
 
1 medium onion, minced
3 strips crisply cooked bacon, crumbled
2 T finely chopped jalapeno peppers

Instructions
Preheat oven to 350 degrees F. Lightly butter 10-inch cast-iron skillet. Place in oven until hot.
Mix cornmeal, flour, baking powder, & salt in medium bowl. Mix eggs, milk, cheese, oil, corn, onion, bacon & jalapeno peppers in a large bowl.
Stir in dry ingredients just until blended. Spoon into prepared skillet. Bake approximately 30 minutes. Bread should be golden & toothpick tested in center should come out clean. Serve while hot.
Serving Suggestions
Used pyrex baking dish in place of skillet. Bread was excellent
