     Orange French Toast

Ingredients
2 eggs, beaten
1 cup orange juice
10 slices commercial raisin bread
1-1/2 cups vanilla wafer crumbs (about 33 wafers)
2 to 3 T butter or margarine, divided
Additional butter (optional)
Maple Syrup (optional)
 

Instructions
Combine eggs & orange juice- beat well w/ a whisk. Quickly dip each slice of raisin bread into egg mixture, and coat bread on all sides w/ vanilla wafer crumbs.
Melt 1 tablespoon butter in a large skillet. arrange 3 or 4 slices bread in a single layer in skillet, and cook over medium heat 1 to 2 minutes on each side or until browned. Repeat w/ remaining bread slices, adding more butter as needed.
Serve w/ buter & warm maple syrup, if desired.
Serving Suggestions
Leave vanilla wafer crumbs fairly coarse (chop w/ chef's knife)
