     Crockpot French Onion Soup

4 large onions, diced
1/2 cup butter
2 tablespoons flour
6 cups beef stock
1 teaspoon salt
1 baguette -- toasted and sliced
1 cup shredded Mozzarella cheese

In a large skillet, saute the onion in the butter. Add the flour and mix thoroughly.
Add the onion mixture to a slow cooker. Add the beef stock and salt. Cover; cook on low 8 to 10 hours or on high for 4 to 5 hours.
Ladle the soup into ovenproof bowls and top with the bread and cheese. Broil in the oven until the cheese is melted.
