     Chicken & Wild Rice Casserole

Ingredients
6 lbs Chicken Breast
1 cup Water
1 cup dry (or cooking) sherry
1/2 tsp curry
1 med onion, coarsely chopped
1 1/2 cups celery, coarsely chopped
1 1/2 tsp sea salt
1 lb Mushrooms, sliced
1/4 cup margarine (or butter)
 
2 small packages long grain &wild rice mix prepared according to directions using broth from chicken
1 cup Sour Cream (or plain yogurt works for less calories)
1 can cream of mushroom soup (campbell's healthy request for less salt)
slivered almonds

Instructions
Preheat oven to 350.  Place chicken in pan with water, sherry, curry, onion, celery, and salt.  Bake 1 hour.  Let cool. 
Saute mushrooms with butter. Add cooked rice mixture to mushrooms, then add sour cream and soup.
Cut chicken into chunks and add to mixture
Place in greased 9x13 pan Top with slivered almonds Bake for 1 hour.
