6 lbs Chicken Breast
|
|
1 cup Water
|
|
1 cup dry (or cooking) sherry
|
|
1/2 tsp curry
|
|
1 med onion, coarsely chopped
|
|
1 1/2 cups celery, coarsely chopped
|
|
1 1/2 tsp sea salt
|
|
1 lb Mushrooms, sliced
|
|
1/4 cup margarine (or butter)
|
|
|
|
2 small packages long grain &wild rice mix prepared according to directions using broth from chicken
|
|
1 cup Sour Cream (or plain yogurt works for less calories)
|
|
1 can cream of mushroom soup (campbell's healthy request for less salt)
|
|
slivered almonds
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|

Instructions |
|
|
Preheat oven to 350.
Place chicken in pan with water, sherry, curry, onion, celery, and salt. Bake 1 hour. Let cool.
|
|
|
Saute mushrooms with butter.
Add cooked rice mixture to mushrooms, then add sour cream and soup.
|
|
|
Cut chicken into chunks and add to mixture
|
|
|
Place in greased 9x13 pan
Top with slivered almonds
Bake for 1 hour.
