To Make Mix
In a bowl, combine the sugar, flour, cocoa powder and baking powder. Place mixture into an airtight container and seal and label. Store up to 1 year in a cool, dry place. (Makes enough mix for 3 cakes- 6 cups).
To Make Cake
In a bowl, combine 2 cups mix, eggs, mayonnaise and milk and mix until combined. Pour into a well-greased 8-inch round Microwave-safe cake pan. Microwave at 50 percent power for 7 minutes. Microwave 5 to 6 minutes longer or until a toothpick inserted in cake comes out clean. Cool for 10 minutes before removing cake from pan. Cool on a wire rack. Frost with favorite frosting. (each cake serves 6 - 8).
