     Chocolate Oatmeal Cake

1 1/2 cups boiling water
1 cup old fasioned oatmeal
1 cup butter, softened
2 cups sugar
2 eggs
1 tablespoon vanilla
1 cup flour
1/2 tsp salt
1 tsp baking soda
1/2 cup cocoa

Preheat oven to 350 degrees. In a large bowl combine oatmeal and water. Stir and let stand 8-9 minutes. Add butter to the oatmeal mixture and let stand until melted. Add sugar and mix. Beat eggs, then add to the mixture. Add vanilla.
In a bowl sift flour, salt, soda, and cocoa. Combine wet ingredients with dry ingredients. Mix well. Pour into a lightly greased 9x13 or two 8" round cake pans. Bake 30 to 35 minutes.
Cool and frost with desired icing. Cream cheese or sour cream frostings work well.
