Chicken Salad with Raspberry Vinaigrette

Ingredients
-
10 oz baby spinach, washed well and spun dry
-
12 oz grilled boneless skinless chicken breasts, sliced
-
1 pint fresh raspberries, divided
-
3 tbs red-wine vinegar
-
1 tbs honey
-
1 tbs extra virgin olive oil
-
1 small shallot
 

Instructions
Divide spinach, chicken and 3/4 of the raspberries on 4 plates
Combine remaining ingredients in a blender until smooth
Drizzle evenly over salad plates
