     Pumpkin Cheesecake Cupcakes

Ingredients
2 lbs cream cheese
1 2/3 c sugar
1/4 c flour
1 15-oz can pumpkin pie mix
4 eggs
2 Tbl rum
36 ginger cookies
 

Instructions
Preheat oven to 325 degrees. Cream together sugar and cream cheese until fluffy, scraping bowl often. Next, add pumpkin and then eggs one at a time, making sure to scrape the bowl after each addition. When eggs are fully incorporated, add the rum and flour and mix well.
Place papers in standard cupcake pand and place one cookie in the bottom of each paper. Fill with cheesecake mixture, then bake for 30 to 40 minutes until fluffy but not fully set.
