Preheat oven to 400 degrees. Season beef with salt and pepper and brown in a skillet with the garlic. Drain.
Lightly dust counter with flour. Roll out dough to a 16- to 18-inch round. Place on greased baking sheet.
Layer the beef on one side, followed by teh ricotta, herbs, olives, tomatoes and mozzarell, leaving 1-inch border. Brush edges with egg wash. Fold dough over filling, press edges together and brush with oil. Cut 3 vents in the top. Bake until golden, 35 min. Cool slightly before cutting into 6 calzones. Top with spaghetti sauce.
