     Vegetarian Lasagna

Ingredients
2 or 3 cloves Garlic, minced (or more to taste)
1 small Onion, chopped
1 or 2 stalks celery, sliced
4 medium Zucchini squash, sliced
1 Tbsp. Oil
1 can (6 oz.) Tomato Paste
3 oz. Water
1 can (1 lb. 4 oz.) Stewed Tomatoes
1 tsp. Salt
 
Pepper to taste
cooked Lasagna Noodles (6 or 9)
1 carton (12 oz.) Cottage Cheese
8 oz. Mozzarella Cheese, grated

Instructions
Saute garlic, onion, and celery in hot oil. Add Zucchini, cook until translucent, but still firm. Add tomato paste, tomatoes, seasonings, and water. Cover and simmer 20 minutes.
Heat oven to 350 degrees. In oblong baking dish, 11 1/2 x 7 1/2 alternate layers of cooked noodles, cheeses, and sauce. Bake 20 to 30 minutes.
Note- I have learned that in order to have a nice soft noodle and saucy lasagna be sure the second layer of noodles is well covered by the meat sauce. I put in one layer of noodles, cover with one half of the cottage cheese and sprinkle with half of the mozzarella cheese, then cover with one half of the sauce. Repeat the process for the top layer.
