     Red Velvet Cupcakes

2 1/2 C flour
1/2 C unsweetened cocoa powder Hersheys
1 t baking soda and 1/2 t salt
1 C (2 sticks) softened butter
2 C sugar
4 eggs
1 C sour cream
1/2 c milk
1 bottle (1oz) red food coloring
2 t vanilla

Mix flour, cocoa powder, baking soda, salt. set aside.
Beat butter and sugar till light and fluffy (5 min or so) Beat in eggs 1 at a time. mix in sour cream, milk, food color and vanilla. gradually beat in flour mixture on low speed till blended. DO NOT OVERBEAT. spoon batter in to paper lined muffin cups filling each 2/3 full will make 30 regular size or 15 large.
Bake in preheated 350 oven. for 20-25- minutes or until toothpick inserted into center comes out clean. cool in pans 5 min. remove from pans Cool completely. ice with Vanilla Cream Cheese Frosting.
VANILLA CREAM CHEESE ICING; Beat 1 8 oz. package of cream cheese, softened, 1/2 stick of soft butter (1/4/ cup) and 2 t vanilla, 2 Tablesspoon of sour cream in large bowl till light and fluffy. gradually beat in 1 box (16oz.) powdered sugar on medium speed till smooth.
