     Pork Hash Left Over Loin

Ingredients
1/2 onion, coarsely chopped
4 slices bacon
1/2 carrot, chopped
1 small to medium size apple, cut in chunks
1 chipolte chile in adobo sauce, chopped
3-5 pickled jalapeno slices, diced
1/2 grilled pork loin (leftover)
 

Instructions
Fry bacon and onion together until bacon in crispy, fully cooked. Remove bacon. Cook onions until translucent.
Add apple, chipolte, jalapeno, carrots together. Mix to coat all ingredients. Add to onions. Cook until onions are transparent and apples are soft tender.
Remove any marinate or rub that may be one the meat. Cut pork loin into 1/4 to 1/2 inch pieces. Crumble bacon. Add pork loin to pan. Stir, warm on medium heat for 2 minutes. Sprinkle bacon over top,stir. Turn off heat.
NOTE---the amount of hash depends on the size of the left over loin from bar-b-que-ing. Home made hash is always an approximate recipe, a little bit of this and that, depending on the leftovers. You might want to cook an extra loin without rub or marinade just for this.
