three quarter cup plus 1 tablespoon sugar, divided
2 tablespoons plus 1/2 teaspoon baking cocoa, divided
2 1/2 teaspoons baking powder
2 teaspoons instant coffee granules
1 teaspoon salt
1/2 cup mini chocolate chips
Instructions
Stir together flour, three quarter cup sugar, 2 tablespoons baking cocoa, baking powder, coffee granules and salt. Spoon into a 1 quart jar, set aside. Place chocolate chips in a small plastic zipping bag, seal and place on top of mix. Place remaining 1 tablespoon sugar and remaining 1/2 teaspoon cocoa in a mini plastic zipping bag, place in jar. Secure lid, attached instructions. Makes 3 cups
Instructions
combine muffin mix with 1 cup milk, 1/2 cup melted butter, one beaten egg and 1 teaspoon vanilla extract, mix until just moistened. Fold in chocolate chips, spoon equally into 12 greased or paper lined muffin cups. Sprinkle with sugar and cocoa mixture in small packet, bake at 375 F for 15 to 18 minutes. Cool on wire rack. Makes one dozen.
