to Prepare Pumpkin-
Halve or quarter the pumpkin. Remove seeds and stringy portions. Cut off rind and cut into smaller Pieces. cook pumpkin pieces in a small amount of lightly salted boiling water for about 25-30 minutes. When pumpkin is sofr and done cooking, drain well. Mash, then place in a strainer and allow pumpkin to continue to drain to remove any excess liquid. Use cooked , mashed pumpkin in any recipe callin for canned pumpkin.
