     gramma's fresh pumpkin pie

1 9 inch unbaked pastry shell
11/2 cups cooked, mashed, fresh pumpkin
1 cup evaporated milk
3 eggs
1 tsp cinnamon
1/2 tsp ginger
1/2 tsp cloves
1/4 tsp nutmeg
1/2 tsp salt
1 cup sugar
whipped cream to serve (optional)

Preheat oven to 400.
In a large mixing bowl beat eggs slightly. stir in pumpkin and evaporated milk. Mix well. Add Sugar and spices. blend well. Pour mixture into unbaked pastry shell.
Bake for 45-50 minutesor until a knife inserted in the center comes out clean.
to Prepare Pumpkin- Halve or quarter the pumpkin. Remove seeds and stringy portions. Cut off rind and cut into smaller Pieces. cook pumpkin pieces in a small amount of lightly salted boiling water for about 25-30 minutes. When pumpkin is sofr and done cooking, drain well. Mash, then place in a strainer and allow pumpkin to continue to drain to remove any excess liquid. Use cooked , mashed pumpkin in any recipe callin for canned pumpkin.
