     Creamy Cheddar Soup

Ingredients
1 small onion, chopped
2 large pimentos, chopped
3 Tbl Butter
3 Tbl all-purpose flour
1 1/2 cups chicken stock
1 1/2 cups half-and-half
3/4 cup grated sharp cheddar cheese
Salt and group pepper to taste
Dash of cayenne pepper (optional)
 

Instructions
In a saucepan, saute onion and pimentos in butter for 5-7 minutes. Blend in flour. Add stock and half-and-half. Cook until thick.
Add cheese and stir until melted. Add salt and pepper to taste and cayenne if desired.
Serving Suggestions
Serves 3 to 4
