1 small onion, chopped

2 large pimentos, chopped
|

3 Tbl Butter
|
|
3 Tbl all-purpose flour
|

1 1/2 cups chicken stock
|
|
1 1/2 cups half-and-half
|
|
3/4 cup grated sharp cheddar cheese
|
|
Salt and group pepper to taste
|
|
Dash of cayenne pepper (optional)

Instructions |

|
In a saucepan, saute onion and pimentos in butter for 5-7 minutes.
Blend in flour. Add stock and half-and-half. Cook until thick.

Add cheese and stir until melted. Add salt and pepper to taste and
cayenne if desired.
