     Taco Salad

Ingredients
Leftover meat (ground beef left from tacos, chicken from fajitas, or rotisserie chicken)
Lettuce
Tomatoes
Onions
1 can whole kernel corn (drained)
1 can black beans or ranch style beans (drained and rinsed)
1 can black olives (chopped and drained, optional)
Tortilla chips
Sliced avocado (optional)
 
1/4 cup shredded or cubed chedder cheese
Catalina dressing or Honey Mustard Chipotle (see recipe in sauces)

Instructions
Prepare greens and add all ingredients, except chips and blend well. Mix in Catalina dressing or Honey Mustard Chipolte dressing.
Top with crushed tortilla chips.
Serving Suggestions
Good way to use leftover taco meat, baked chicken or fajitas for another meal for two!
