     Favorite Chicken and Rice Casserole

Ingredients
4- chicken breasts or 6 thighs
2 cups uncooked rice (minute rice)
1 can cream of mushroom soup
1 can cream of chicken soup (optional)
1 package Lipton instant onion soup mix
4 Cups water
1 can mushrooms (drained, optional)
Salt and pepper to taste
 

Instructions
Mix canned soups with dry soup mix and add water, stirring well. Add mushrooms if desired.
Sprinkle rice over bottom of large baking dish and lay chicken on top. Season chicken as desired.
Pour soup and water mixture over chicken, lifting pieces to allow soup mixture to reach rice underneath.
Cover and bake 1 hour at 350 degrees. Remove cover and bake 15 min extra if drier rice is desired.
Serving Suggestions
Serve with green beans and a salad for a well balanced meal.
